Autumn/Winter Recipe - Russian Shredded Potato Patties
Russian kotlety meat patties are made out of the ground meat mixture that is shaped into patties and pan-fried. You can make these Russian meat patties out of any kind of ground meat: ground beef, ground pork, ground chicken or ground turkey.
Ingredients
2 3/4 lbs. peeled potatoes (Russet type)
1 onion, quartered with root intact
1 egg
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Method
STEP 1
In a large colander, coarsely grate the potatoes and onion, alternating. Squeeze out as much liquid as possible and place in a large bowl. Add egg, flour, salt and pepper and mix.
STEP 2
Pour enough vegetable oil into a large pan to cover the sides to a height of about 1/2 inch (1 cm) and heat over medium heat. Spoon about 1/4 cup (60 mL) of the potato mixture into each patty. Press patties lightly with a fork to flatten them (leaving about 1" (2.5 cm) space between each). Cook for 5 to 6 minutes or until golden brown and edges are crisp (turn halfway through cooking). Drain on a plate lined with paper towels. Cook remaining potato mixture in same manner.
